The pickle is associated with daikon sold at an Edo-period Ebisu fair around Takarada Ebisu Shrine. Nihonbashi Bettara Market, held on October 19 and 20, is presented by Chuo City's tourism association as a tradition dating to the Keicho era.

Its name is linked both to sticky koji clinging to clothes and to good fortune clinging to the buyer. Rather than proving one etymology, the festival and pickle together express an Edo autumn custom.

How to enjoy it

Leave a little koji on the surface, slice the daikon 5–8 millimeters thick, and taste it plain before pairing it with rice, grilled fish, or sake.
