What is it?

Oyaki encloses cooked nozawana greens, dried daikon, miso eggplant, pumpkin, mushrooms, beans or other fillings in a wrapper made from wheat, buckwheat, millet or rice flour. Despite the name, it may be steamed, griddled, steamed after browning, fried or hearth baked.

In mountain districts poorly suited to rice, flour foods served as meals and farm-work snacks. Oyaki now appears as home cooking, specialist-shop food and frozen Nagano souvenirs.

History and local context

Traditional hai-yaki browns the surface before placing the dumpling among warm hearth embers and ash. Steamed, griddled-steamed and oil-browned wrappers have very different textures.

Archaeological traces of baked grain paste in Nagano show ancient flour use, but do not prove that today's filled oyaki has continued unchanged since the Jomon period.

How to enjoy it
