What is it?

Kajika-jiru is a Hokkaido fish soup that simmers bone-in pieces of kajika with skin, liver and vegetables such as daikon, carrot, potato and leek, commonly finishing the broth with miso. Bones and gelatinous parts give the soup body, while liver adds concentrated richness.

Kajika is not one precise fish name throughout Hokkaido. Otaru's tourism association discusses tohbetsu-kajika, the local name for kemushi-kajika, as well as makajika used by a restaurant; the species, seasoning and edible parts therefore vary by coast, market and season.

History and local context

Fishing communities used more than the fillet because skin, bones and organs build a deeply flavored winter broth. The nickname nabekowashi, or pot breaker, playfully suggests diners poking the pot so eagerly that they might break it, but it is a regional nickname used around more than one kajika fish.

Winter is the representative season in Hokkaido, when some species approach shore to spawn. Miso is common, yet salt- and soy-seasoned household versions also exist, so no single recipe should be presented as universal.

How to enjoy it

Taste the broth first, then compare the lean flesh, springy skin and a small amount of liver. Eat slowly and separate the meat with chopsticks because kajika has many bones.

Ask a fishmonger to identify and prepare a kajika specifically for soup; never rely on amateur species identification. Keep soup containing liver or roe refrigerated and reheat it thoroughly rather than leaving it at room temperature.

Availability varies by maker, season, and destination.
