Bibai yakitori alternates chicken skin, thigh and several offal parts such as liver, heart, gizzard and kinkan with local onion on one skewer, then grills it with salt and pepper.
The representative motsu skewer changes from fat to springy or slightly bitter offal and sweet onion, unlike a uniform skewer of breast or thigh pieces.
History and local context
Official Hokkaido tourism dates the style to around 1955 in coal-mining Bibai and explains that using skin through viscera made economical use of the whole chicken. Onion and simple salt-pepper seasoning are hallmarks.
Bibai shops may also sell seiniku skewers made from breast or other muscle meat. Offal defines the iconic motsu skewer but not every item sold under the local yakitori tradition.
How to enjoy it
Eat from one end to follow the changing skin, onion, organ and meat textures. Locals may also remove pieces over a bowl of soba.
Kinkan here means an immature chicken yolk, not a citrus fruit. Cook all chicken and offal thoroughly with no raw center, and separate raw-meat tools from ready-to-eat food.
