Senbei jiru is a soup from Hachinohe and southeastern Aomori, also eaten in northern Iwate. Chicken, burdock, mushrooms, leeks, and other vegetables simmer in savory broth before firm soup-grade Nanbu senbei are broken into the pot.
These are not thin snack crackers. Special otsuyu or kayaki senbei absorb broth without immediately dissolving, developing a chewy texture between a dumpling and a broad noodle.
History and local context
The former Nanbu domain had a strong wheat and millet food culture because rice harvests were not always reliable. Durable Nanbu crackers became everyday stored food, and simmering them in soup made a warming meal for field and mountain work.
Soy-seasoned chicken broth is common, but families and restaurants also use fish, mushrooms, salt, or miso. Hachinohe civic groups helped make the once-local home dish nationally known in the 2000s.
How to enjoy it
Add broken soup senbei near the end and eat when the edges are soft but the center still has some bite. Do not substitute a sweet or fragile snack senbei.
For a 3-to-4-person home version, simmer chicken, burdock, carrot, mushrooms, leek, and konnyaku in dashi; season with soy sauce, sake, and mirin, then add about 8 to 10 soup senbei just before serving.
