What is it?
Izushi layers fish, vegetables, rice and rice koji and lets them undergo lactic fermentation in Hokkaido's cold season. Salmon, herring, hokke, hatahata and saury are among the fish, with daikon, carrot, cabbage and ginger.
It is a grainy, mildly tart form of narezushi, not nigiri or pressed vinegared-rice sushi. Families traditionally prepared it in autumn or early winter for New Year and celebration tables.
History and local context
MAFF describes a relatively short, low-temperature fermentation that gives less aggressive aroma than many long-aged narezushi. Fish, vegetables, salinity and maturation time differ by locality and producer.
Fermenting raw fish under low-oxygen conditions requires validated control of serious hazards including botulism. Vinegar or cold weather alone does not make an improvised home process safe.
How to enjoy it
Serve a small chilled portion so fish fat, koji sweetness, lactic acidity and crisp vegetables are tasted together, whether beside hot rice, sake or a holiday meal.
Follow refrigeration, thawing and after-opening limits exactly. Never taste a swollen, leaking or abnormally smelling package; vulnerable diners should seek producer or medical guidance.
Availability varies by maker, season, and destination.
