History and local context
Toyama's official food site traces the familiar lineage to a 1717 ayu sushi presented by domain retainer Yoshimura Shinpachi, later adapted with spring-run cherry salmon from the Jinzu River. Railway bento sales carried it nationwide.

How to enjoy it

Do not assume refrigeration is always best: some makers specify cool room-temperature storage because cold hardens the rice. Follow the exact package for temperature and use-by time.
