What is it?
Zabieru is Zabieru Honpo's small rounded rectangular Oita pastry. A buttery baked shell encloses either smooth plain white bean paste, the silver type, or white bean paste with chopped rum-soaked raisins, the gold type.
Its name recalls Francis Xavier's 1551 visit to Bungo, but the pastry is not a sixteenth-century recipe he introduced. Chokyudo launched it in 1957; former staff revived it through Zabieru Honpo in 2001 after production had stopped.
History and local context
The product deliberately combines Western butter pastry with Japanese bean filling and Oita's Nanban-era narrative. Gold and silver indicate different fillings, not merely wrapper colors.
