What is it?
Shonan shirasu don covers rice with same-day raw shirasu or fluffy salt-boiled shirasu from Sagami Bay. Raw shirasu is translucent, soft, and faintly bitter; kama-age shirasu is white, tender, and lightly salty, and a two-style bowl lets diners compare them.
Kanagawa defines shirasu as juveniles of Japanese anchovy, sardine, and round herring, not anchovy alone. Catch and products from participating fishers are registered as the Shonan Shirasu Kanagawa brand.
History and local context
The fishing ground runs along Sagami Bay from Nagai in Yokosuka to Odawara. Fishers process much of the catch themselves on the landing day into kama-age, dried shirasu, and tatami-iwashi. Raw shirasu deteriorates quickly and depends entirely on weather and catch.
Fishing is closed from January 1 through March 10 to protect resources. Even in season, rough seas, poor catch, and sellouts mean raw shirasu is never guaranteed.
How to enjoy it
Taste the shirasu before adding soy sauce, then add ginger, scallion, shiso, or nori a little at a time; mix in egg yolk last. Eat raw shirasu on the purchase or serving day, and choose cooked kama-age if raw seafood is unsuitable.
Availability varies by maker, season, and destination.
