What is it?

Nishin soba combines hot buckwheat noodles and clear dashi with migaki nishin, dried herring slowly simmered until tender in a sweet soy seasoning. As the fish is broken up, its oil and sauce gradually deepen the broth.

Matsuba, beside Kyoto's Minamiza theater, says its second proprietor Matsuno Yosakichi introduced the pairing in 1882. The bowl adapted a valuable inland source of preserved protein to Kyoto's dashi culture.

History and local context

The herring is not raw. Dried fish is rehydrated and simmered into a tender boni preparation; thickness, sweetness, sansho and broth strength differ by shop.

Herring is now usually displayed on top, but an older Matsuba arrangement placed it beneath the noodles so diners tasted soba first and let the fish season the later broth. Hokkaido towns also have nishin-soba traditions, which should not be collapsed into Kyoto's origin story.

How to enjoy it

Taste broth and noodles before breaking the fish. Then combine a little herring with each bite and follow how the bowl changes. Although long cooking softens many bones, eat manageable pieces and check rather than swallowing quickly.

For home assembly, use prepared herring boni and keep the soba broth relatively light so the fish does not overwhelm it.
