What is it?
Nukadaki simmers mackerel or sardines in a sweet soy sauce, then adds a mature fermented rice-bran pickle bed as seasoning until even the bones soften. Bran aroma, sansho, chili, and the oily fish make it a distinctive Kokura and Kitakyushu dish.
Also called jindani or nukamiso-daki, it is not fish merely coated in dry bran. Kitakyushu describes the use of a living nuka bed in the braising liquid as unusual in Japan.
History and local context
Kitakyushu cites a 1626 record of Kokura lord Hosokawa Tadatoshi sending a nuka bed to his father, after which people in the former Buzen area came to simmer mackerel and sardines with it. This does not document one inventor of nukadaki.
Nuka beds vary with salt, kombu, chili, sansho, and years of replenishment. The story that a lord named it jintate-ni should be presented as tradition rather than settled naming history.
How to enjoy it
Place a little fish, skin, and sauce on hot rice, then try it with sake, ochazuke, or in onigiri. Bone softness varies even after long cooking; check carefully, refrigerate after opening, and note mackerel, soy, wheat, and salt.
