Fukuya records that founder Toshio Kawahara drew on a flavor remembered from Busan and first sold Aji no Mentaiko in Nakasu on January 10, 1949. Fukuoka City likewise treats mentaiko as a Korean-rooted food that became part of Hakata culture.
Kawahara shared his method rather than patenting it, allowing many makers to develop distinctive versions. The opening of the Sanyo Shinkansen to Hakata in 1975 helped turn refrigerated roe into a nationally recognized travel gift.
