The prototype is traced to a staff meal at the Western-style restaurant London in 1950s Nobeoka. Former cook Nao Goto served a tartar-free sweet-vinegar version at Nao-chan around 1964, while Teruyuki Kai developed the tartar-topped restaurant style at Ogura around the same period.
Nao-chan therefore represents the origin-line sweet-vinegar style, while Ogura represents the modern mainstream. Restaurants also differ in breast versus thigh meat, egg-batter technique, vinegar sharpness, and tartar ingredients.
