Despite ame in the name, the classic form is not a wrapped hard candy. It is twirled from a tin or jar with chopsticks or a spoon, eaten plain, spread on a plain senbei cracker or used sparingly as a cooking sweetener.
History and local context
A regional producers' group says Tsugaru domain lord Tsugaru Nobumasa encouraged syrup making as supplementary work. Jyoboshi Takeuchi, founded in 1858, continues the craft and preserves an iron kettle that survived the Aomori air raid.
Saccharification temperature and concentration shape color, aroma and viscosity. Products sold under the traditional name can differ in grain, malt, container and firmness, so the maker and ingredient panel matter.
How to enjoy it
Use two clean dry chopsticks together, lift a small amount and rotate them to keep the syrup from dripping. Taste it plain, then spread a thin layer on an unsweetened Nanbu senbei.
Keep water and crumbs out of the container and follow its storage label. Viscosity changes with room temperature, becoming firmer when cool and more fluid when warm.
