It differs from sara udon, which places a thick topping over crisp thin noodles or fried thick noodles and is not a soup bowl.
History and local context
Nagasaki City and Shikairo trace champon to Chen Ping Shun, who founded Shikairo in 1899 and devised a filling, nutritious and inexpensive meal for Chinese students. It was initially called Shina udon.
Several etymologies exist, including Fujian food or greeting words and a Portuguese word associated with mixing. Sources disagree, so no single word origin should be asserted as certain.
How to enjoy it
