What is it?
Jushi is an Okinawan rice family made with pork or bonito stock and ingredients such as pork belly, carrot, dried shiitake, kamaboko, and kombu. The firmer mixed-rice form is kufa-jushi; the soft porridge form is yafara-jushi or boro-boro-jushi.
Some recipes use lard for gloss and pork flavor, but jushi is not simply a heavily oiled pilaf or fried rice. The defining method cooks rice with seasoned stock and ingredients.

Kufa corresponds to hard or firm, while yafara means soft. Okinawa's certified Ryukyu-cuisine materials list stock, pork belly, carrot, shiitake, kamaboko, lard, and rice for kufa-jushi.
